Cédric Mottet, an Arbois native who spent his early career as a professional jazz musician before returning home to wine — the domaine's name is a nod to that former life. After apprenticing with respected Jura growers including Stéphane Tissot and Jean-Michel Petit, Mottet founded the estate in 2017 with a 1.6-hectare parcel of old-vine Chardonnay purchased from Tissot, and has since built it out parcel by parcel — adding plots in Mesnay and Arbois in 2018, planting young Savagnin at Les Sarres near Grozon in 2019, and acquiring the Buvilly plot La Pierre in 2021. He farms organically with biodynamic-inspired practices, ferments everything spontaneously with minimal sulfur.

Cedric is very proud of his Jura roots and continues to make AOC wine, which is starting to become less and less common with modern Jura.

Before moving to France, Marina and Dede Santos spent about 12 years running a sustainable farm, winery, and bistro in Brazil. They were drawn to the Jura for its distinctive grapes and style. The couple relocated to France in late 2021, initially buying vineyard land in Beaujolais before settling in the Jura – Nevy-Sur-Seille. In 2023 they started collaborating with Celine and Steve Gormally of Les Dolomies and eventually leased some parcels of La Chaux and Les Combes. They are 100% organic or biodynamic and everything is hand harvested. They are completely 0/0 so the wines are very fresh, very pure, and a true expression of where they’re from. Their early cuvees were mostly non-Jura fruit but starting in 2024, they started producing Jura wine under their label.

Domaine des Ourobores

Nicolas-Julian Hilbold (NJ) farms on organic (AB-certified) and biodynamic (Demeter and Biodyvin-certified) principles — hand-harvesting everything, working the soil minimally. NJ’s education is in science and engineering. He trained in Switzerland (Cave des Amandiers, Domaine Wannaz) and in the Jura (Philippe Chatillon, Domaine La Lou). You can probably see why his work would be extremely precise. It translates directly into his wines which are incredibly, clean, well measured and has been given a lot of thought. He prefers to work with no sulfur but will add a tiny bit when he feels it is absolutely necessary.

NJ works ~4 ha throughout the Jura as well as vinifying a number of negociant cuvees from organically farmed fruit purchased from grower friends outside of the Jura (Alsace, Cotes du Rhone and Bugey). You would almost believe these grapes were grown in the Jura after getting to try them.

Domaine Pentacrines

Marie Menoux and Thomas Rougier are both career-changers who left Lyon to pursue viticulture and winemaking. Before striking out on their own, they trained at three respected Jura natural-wine estates: Les Pieds sur Terre, Les Bottes Rouges, and with Nicolas Jacob. That apprenticeship shaped their stated approach: minimal intervention and transparency rather than stylistic manipulation. They have holdings in both Poligny and Grozon and currently farm 5.5ha of organic or biodynamic vineyards. Hand harvested, indigenous yeast, no filtration and minimal to zero added SO2 across their entire range. They have a flare for doing some really interesting blends while still keeping the heart and soul of Jura.
